SIRLOIN STEAK WITH PROSCIUTTO DI SAN DANIELE AND RED WINE SAUCE

Ingredients for 4 people



For the sirloin steak

600 g sirloin steak

8 slices of Prosciutto di San Daniele

Butter 



For the sauce

0.5 l red wine

1 shallot

2 bay leaves 

200 ml brown stock

Peppercorns



Preparation

Reduce the wine with the shallot, bay leaves and pepper until the sugar in the wine has caramelized. Then add the brown stock, bring to a gentle boil and strain the entire mixture. Melt the butter in a casserole, brown the steak on both sides and finish cooking in the oven. Place the steak on a plate onto which you have already put the sauce, and finish by covering the steak with the Prosciutto di San Daniele.
